For Mandy
2/3 cup of butter
2/3 cup of flour
8 cups of Milk
4 large baking potatoes cubed (about 4 cups baked, cooled and peeled)
12 crispy strips of bacon (for crumbling) reserve grease for rue
2 cups shredded cheddar cheese
8 oz sour cream
salt and pepper to taste
chopped scallions for garnish
In
a large stockpot over low heat, melt butter and add bacon grease. Stir in
flour; stir until smooth and bubbly(that's your rue). Gradually add milk, stirring
constantly, until sauce has thickened. Add potatoes and onions. Continue
to cook, stirring constantly, until soup begins to bubble. Reduce heat;
simmer for 10 minutes. Remove from heat and add sour cream. Spoon into bowls. Sprinkle with crumpled bacon bits, shredded cheese and chopped scallions. ENJOY!!!!!
